Weekend Meal Inspiration - Micro Acres Shrimp & Microgreen Spring Rolls
This week's recipes comes from our good friends David & Kirstin at Micro Acres! Located in Airdrie, Micro Acres produces fresh, organically grown microgreens.
8 – Rice Paper Wraps
¼ cup – Pickled Ginger - julienned
1 ½ Tbsp – Toasted Sesame Seeds
½ lb – Peeled Medium Shrimp (cooked)
½ cup – Micro Cilantro
2 ½ cup – Pea Shoots
1 cup – Micro Daikon Radish Greens
1 Large – Bowl of Warm Water
Immerse 1 rice paper wrapper in water for 10-15 seconds or until it becomes limp.
Carefully transfer wrapper onto plate. Place another wrapper into the water while filling the first one.
Layer each ingredient down the centre of the wrapper.
Fold in both sides, gently wrapping like a tiny burrito and cut on the sharp bias.
Repeat until all 8 wraps are rolled.
Serve with peanut sauce or Nuoc cham
